Matchoco-Latte Shortbread – Moody Holiday Cookies

It’s that time of year again! From the New York Times to your favorite TikTokers, everyone is posting their favorite cookie recipes. Of course we couldn’t miss this opportunity to share our faves with you, starting with these incredible Matchoco-latte Shortbread.

If we’re being honest, as matcha lovers we make these cookies year round. Still, we can’t deny the green color is perfect for holiday cookies. Shortbread doughs are super easy to throw together, easy to customize, and perfect for decorating. You can make these cookies in whatever shapes you like, but we think that gorgeous matcha green is ideal for a Christmas tree shape. Plus, decorating these is a super fun activity for the whole family! Think chocolate ornaments on a tree, chocolate buttons on a snowman, or chocolate faces on your gingerbread people! You could even decorate your own ornaments (just poke a hole in your cookies before baking so you can add a string!

These cookies are simple, but make the perfect addition to your afternoon tea or dessert with your evening cup. The rich chocolate adds a deep sweetness to the simple matcha shortbread, which is less sweet on it’s own. Please note that the recipe calls for our traditional Matcha, since the Matchoco-latte blend contains extra ingredients that might throw off the dough. However, you can always play with the amount of matcha in the recipe, adding or subtracting to fit your tastes. You could even try switching out some matcha for unsweetened cocoa powder if you want to up the chocolate flavor!

Matchoco-latte Shortbread

These delicious matcha shortbread cookies, inspired by our Matchoco-latte blend, are perfect for the holidays. The festive green color gives off major holiday vibes, but the rich matcha and chocolate flavors are perfect year round.

  • 1 cup butter (softened)
  • ½ cup granulated sugar (plus some extra for sprinkling)
  • 1 teaspoon vanilla extract
  • 2 ¼ cups all-purpose flour
  • 2 ½ tablespoons matcha
  • ¼ teaspoon salt
  • ½ cup chocolate (melted)
  • ¼ cup peppermint, sprinkles, or other decor
  1. With an electric mixer (or a whisk if you’re looking for a major arm workout) beat butter, sugar, and vanilla extract together for a few minutes until light and fluffy.
  2. In a separate bowl, combine flour, matcha powder, and salt, and gradually add this mixture to the butter mixture.
  3. Gather and press the dough into a flattened disk and chill until firm, about 2 hours.
  4. When ready to bake, preheat the oven to 325°F and line 2 baking sheets with parchment paper.
  5. Roll out dough to a ¼ inch thickness on a floured surface and use a cookie cutter to cut your favorite shapes. Place cookies on the prepared baking sheet. Gather and reroll any scraps.

  6. Sprinkle cookies with sugar, tapping gently so that the sugar sticks, and then bake for 18-22 minutes, until the cookies are dry and firm (they should still be a beautiful shade of green).

  7. Transfer to a wire rack to let cool completely. Once cool, decorate with melted chocolate – you can dip one side, drizzle on top, or even use the chocolate to add "ornaments" to a tree shape, or buttons and faces to snowmen or gingerbread men.

  8. Optionally, sprinkle melted chocolate with peppermint pieces, sprinkles or other decorations.

  9. Store in an airtight container at room temperature for up to 3 days.
